Easiest Lemon Cookies Everrr!

Just made these delicious Lemon cookies from Gimme Some Oven. Of course I picked them because a) I wanted something "healthy" (p.s. they aren't) and b) they are super duper easy. They start out as cake mix and end up as cookies. WIN.

All you need is...

-1 package lemon cake mix (I used Duncan Hines)

-2 eggs

-1/3 cup vegetable oil

-juice of half a lemon (about 1 Tbsp.)

-zest of half a lemon (about 1 tsp.)

-1/3 cup powdered sugar for decor (optional)

Then...

Preheat oven to 375 degrees- Pour cake mix into a large bowl & stir in eggs, oil, lemon juice & zest and blend-Form dough into small balls and drop into a bowl of confectioners' sugar (if you are having trouble rolling the balls, refrigerate the batter for 10 minutes)- Roll them around until they are lightly covered- place on a lightly-greased cookie sheet (slightly squish them)- Bake for 6-9 minutes.

They should be crispy on the outside & nice and chewy on the inside. Enjoy!
